Eric & Stephanie West are two of Tattersall’s longest tenured and most experienced Spirits Guides, having started with the company in 2016. He’s worked on the manufacturing side of the business and together they bartend & coordinate offsite events. They both focus on building Tattersall’s presence across the Midwest. Eric and his wife Stephanie have an extensive agricultural background which has greatly helped Tattersall’s sourcing processes and connection with the local farming community.

The Ingredients

Juniper: the quintessential gin ingredient, juniper adds a dash of that distinctive “gin” taste to Uncle Val’s.

Coriander: ends a delicious and assertive taste, which contrasts nicely with the cucumber and rose.

Cucumber: adds a cooling effect to the taste, alone with subtle freshness cues.

Rose Petals: originally grown for teas, the large petals of the Grandiflora provide a soothing aroma and calming taste.

In 1835, Charles Tanqueray – Distiller, entrepreneur, and innovator – made his first explorations into Old Tom style gin, perfecting the recipe in the years that followed. Almost 180 years later, Tanqueray Master Distiller Tom Nichol, has drawn inspiration from Charles’ closely guarded recipe in crafting this Old Tom Gin.

This exceptional liquid is lightly sweetened and infused with the finest botanicals, producing a gin that is perfectly suited for classic cocktails. (47.3% ABV/94.6 Proof)

Old Tom Gin is a lightly sweeter version of the modern day London Dry style and distilled in traditional pot stills instead of modern column stills.

Pure Monkey Business

Admittedly, it appears somewhat eccentric to claim that a recipe for gin has the power to unite great British traditions, the exoticness of India, and the purity and nativeness of the Black Forest. And yet it is precisely this eccentricity that defines the enigmatic character of Montgomery Collins, from whom our Schwarzwald Dry Gin originates. His childhood as the son of a diplomat in East Asia, his military career among the ruins of Berlin, and his late-adopted home in the Black Forest supply the autobiographical background for a recipe that represents an audacious combination of native Black Forest herbs and berries and exotic Asian botanicals.

A good third of the ingredients for this special gin come from the Black Forest and are definitely not what you would call typical gin flavorings!  In total, 47 handpicked ingredients, prepared in extremely soft spring water from our own Black Forest source, give MONKEY 47, whose pièce de résistance is the use of local cranberries as some sort of “secret weapon” typical to the Black Forest, its unrivaled complexity and quality, which is fully brought to bear through masterly distillation and maturing in traditional earthenware containers.

Whether with tonic, as a sling, martini, or gimlet, the unique and complex taste of Monkey 47 is an ideal basis for both classics and more eccentric cocktails. With the distinct and pure scent of juniper, a tangy and crisp citrus note, a sweet, floral aroma, a hint of peppery spices, subtle bitter fruit, and a deep and harmoniously balanced complexity with a tremendously racy finish!

Christoph Keller – Master Distiller

Driven by an unquenchable curiosity for botanicals and a passionate desire to explore new sensory territory, combined with a soft spot for exquisite distillates, our Master Distiller, Christoph Keller, has been embarking on his third annual search for that “specie rara” – a special ingredient for a special and unique Black Forest Dry Gin, our Monkey 47 “Distiller’s Cut”. Every year, this special edition of just 3,000 bottles sets the hearts of barkeepers and gin enthusiasts racing with exhilaration.

Just once a year, Keller distills a very small batch of this unique cut – pushing himself to the very boundaries of what is even sensorially feasible in terms of distillation using plant ingredients. The macerate of the Monkey’s 47 “traditional” ingredients is further enhanced by adding a special ingredient, distilled in a further process, matured for 12 months in earthenware containers, and then married with soft water from the Black Forest. But let’s be honest, all we’re really trying to do is keep our Master Distiller happy by allowing him to spend three weeks experimenting to his heart’s content, beyond the boundaries of the conventional.
